Criomaceration of the grapes at 8°C for 48 hours; successive fermentation with the Asti method at 16°C.

The permanence in autoclave continues well after the end of the alcoholic fermentation: this time assures a development capable of developing the marvellous fragrances.

Ageing in bottles for at least 30 days.
