SPARKLING PINOT BIANCO

By anticipating the harvest from between the 10th to the 20th August we can be sure of having the right levels of acidity capable of developing the marvellous fragrances. This international grape variety has settled well on the sun drenched slopes of our hills. Pleasantly sparkling, with the cheerfulness that seduces and never tires. Intriguing for the young consumer, i t doesn’t disappoint the expectations of the more traditional one. Perfect as an aperitivo.

WINEMAKING METHOD

Soft pressing at low pressure; immediate separation of the first pressing must which is then fermented with the selection of yeasts in stainless steel tanks at 14C°, until the sugar content is almost eliminated and forms the desired pressure. It develops sur lies by using the natural lysis of cell walls of the yeasts, then ageing in bottles for at least 30 days.
