Sparkling Pinot Bianco Rubicone I.G.T.



Soft pressing at low pressure; immediate separation of the first pressing must which is then fermented with the selection of yeasts in stainless steel tanks at 14C°, until the sugar content is almost eliminated and forms the desired pressure.

It develops sur lies by using the natural lysis of cell walls of the yeasts, then ageing in bottles for at least 30 days.
