The grapes are delicately pressed, then steeped and fermented in stainless steel tanks for 15/20 days at 28/30 °C.
The cycles of daily refitting allow for the complete extraction of the phenolic content of the cells of the skins.
After the malolactic fermentation follows a lengthy development of the lees contact and the ageing in bottles for at least 90 days.
