CABERNET SAUVIGNON
The hands of experts and the patience of many years of waiting have successfully integrated this international variety into our hills. The careful attention at every step and focused craftmanship have then transformed the grapes into an original wine which is the pride of our business.The full maturation of the grape makes it impenetrable to the eye and offers a potent and majestic nose and a bold texture.
WINEMAKING METHOD
The grapes are delicately pressed, then steeped and fermented in stainless steel tanks for 15/20 days at 28/30 °C.
The cycles of daily refitting allow for the complete extraction of the phenolic content of the cells of the skins.
After the malolactic fermentation follows a lengthy development of the lees contact and the ageing in bottles for at least 90 days.
